The Saskatoon Spring

SaskatoonSpring1 oz Victoria Gin
1/2 oz – 3/4 oz Shrub syrup (see below)
dash of Twisted & Bitter Black Pepper

Combine first three ingredients with ice in shaker. Shake. Strain into tumbler with fresh ice. Press with soda and add a few pickled berries for garnish.

The Schrub: Macerate 1 cup Saskatoon berries in 1 cup wine vinegar for 48 hours. Add 1 cup sugar. Put in a large jar or vessel and stir/agitate/smash the fruit often until the sugar is dissolved. Strain out fruit after a few days.
