Citrus & Fennell Salad

Salad2Serves 6 as a side salad

8 oranges
8 ruby red grapefruits
1 bulb fennel
2 small red onions
1 Tbsp grated fresh ginger
2 Tbsp Twisted & Bitter Rosemary Grapefruit
1 Tbsp salt
1/3 cup finely chopped parsley

• segment the citrus fruit
• finely shave the fennel and red onion (either by hand or with a mandolin if available)
• mix all ingredients together in a large bowl

Can be eaten immediately or kept in the refrigerator for up to three days.
